Chicken in a Pot
Ingredients:
4 bone-in, skinless chicken thighs4 medium carrots, peeled and cut into chunks3 medium potatoes, peeled and cut into chunks1 large onion, quartered4 cloves garlic, minced4 cups chicken broth1 tablespoon olive oil1 teaspoon dried thyme1 teaspoon dried rosemarySalt and pepper to tasteFresh parsley for garnish
Instructions:
Heat olive oil in a large pot or Dutch oven over medium heat. Season chicken thighs with salt and pepper and brown on both sides for 5-7 minutes. Remove and set aside.In the same pot, add garlic and onion and sauté for 2 minutes until fragrant.Add carrots, potatoes, chicken broth, thyme, rosemary, and additional salt and pepper to taste. Stir to combine.Return chicken to the pot, skin-side up. Cover and bring to a simmer.Reduce heat and cook for 30-40 minutes, until chicken is fully cooked and vegetables are tender.Garnish with fresh parsley before serving.
