Cherry Pistachio Cheesecake

Ingredients:

200g digestive biscuits, crushed

100g unsalted butter, melted

500g cream cheese, softened

200g sugar

2 eggs

1 tsp vanilla extract

1/2 cup sour cream

1 cup cherry compote


Fresh cherries for garnish

1/4 cup pistachios, chopped

Whipped cream for decoration

Instructions:

1. Mix crushed biscuits with melted butter and press into the bottom of a springform pan. Refrigerate for 30 minutes.

2. Preheat oven to 160C 320F. Beat cream cheese and sugar until smooth. Add eggs one at a time, followed by vanilla extract and sour cream.

3. Pour the cream cheese mixture over the chilled crust. Bake for 45-50 minutes or until set. Cool completely.

4. Spread cherry compote over the top. Garnish with fresh cherries, whipped cream, and chopped pistachios.

5. Refrigerate for 4 hours before serving. Slice and enjoy!
