Cherry Bomb Chicken

Ingredients:

4 boneless, skinless chicken breasts

1/2 cup cherry preserves

2 tbsp soy sauce

2 tbsp balsamic vinegar

1 tbsp olive oil

2 cloves garlic, minced

1 tsp chili flakes adjust for spice

Salt and pepper to taste

Fresh parsley or green onions for garnish


Instructions:

Preheat oven to 375F 190C.

Season chicken breasts with salt and pepper.

Heat olive oil in a skillet over medium heat. Sear chicken on both sides until golden brown, about 3 minutes per side. Remove and set aside.

In the same skillet, whisk together cherry preserves, soy sauce, balsamic vinegar, garlic, and chili flakes. Simmer for 2-3 minutes until slightly thickened.

Return chicken to the skillet, spoon sauce over each piece, and transfer to the oven.

Bake for 20-25 minutes or until chicken is cooked through.

Garnish with parsley or green onions before serving.
