Bang Bang Chicken
Ingredients:
1 lb chicken breast, cut into bite-sized pieces
1/2 cup cornstarch
2 large eggs, beaten
1 cup panko breadcrumbs
1/2 cup mayonnaise
1/4 cup sweet chili sauce
2 tbsp sriracha sauce
1 tbsp honey
2 tbsp chopped green onions for garnish
Salt and pepper to taste
Cooking oil for frying
Instructions:
Season chicken pieces with salt and pepper.
Coat chicken in cornstarch, dip into beaten eggs, then coat with panko breadcrumbs.
Heat oil in a skillet over medium heat and fry chicken until golden and cooked through, about 3-4 minutes per side. Drain on paper towels.
In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and honey.
Toss fried chicken in the sauce until evenly coated.
Garnish with green onions and serve hot.
