Chef Johns Shakshuka
Ingredients:
2 tablespoons olive oil
1 large onion, chopped
1 red bell pepper, diced
4 cloves garlic, minced
2 teaspoons ground cumin
1 teaspoon smoked paprika
1/4 teaspoon cayenne pepper optional
1 can 28 oz crushed tomatoes
1/2 teaspoon sugar
Salt and pepper to taste
6 large eggs
1/4 cup fresh parsley, chopped
1/4 cup crumbled feta cheese optional
Instructions:
Heat olive oil in a large skillet over medium heat. Add onions and bell pepper, cooking until softened, about 5-7 minutes.
Stir in garlic, cumin, paprika, and cayenne pepper. Cook for 1 minute until fragrant.
Pour in crushed tomatoes and sugar. Season with salt and pepper. Simmer for 10-15 minutes, stirring occasionally.
Make small wells in the sauce and crack an egg into each well. Cover and cook for 5-7 minutes, or until the eggs are cooked to your preferred doneness.
Garnish with fresh parsley and feta cheese if desired.
Serve hot with crusty bread for a delicious and satisfying meal!
