Chef Johns Chicken Tikka Masala
Ingredients:
1 1/2 lbs chicken breast, cut into cubes
1 cup plain yogurt
1 tbsp garam masala
1 tbsp ground cumin
1 tbsp ground coriander
1 tsp turmeric
1 tsp ground ginger
1 tsp chili powder
2 tbsp vegetable oil
1 medium onion, chopped
3 cloves garlic, minced
1 inch piece fresh ginger, grated
1 can 15 oz tomato puree
1/2 cup heavy cream
Salt to taste
Fresh cilantro for garnish optional
Cooked basmati rice for serving
Instructions:
In a large bowl, combine the chicken cubes, yogurt, garam masala, cumin, coriander, turmeric, ginger, and chili powder. Mix until the chicken is coated. Marinate for at least 30 minutes, or overnight for more flavor.
Heat vegetable oil in a large skillet over medium heat. Add onion, garlic, and fresh ginger. Cook for about 5-7 minutes, until soft.
Add marinated chicken and cook for 7-8 minutes, until it is lightly browned.
Stir in the tomato puree and simmer for 10-15 minutes until the chicken is fully cooked and the sauce thickens.
Stir in heavy cream and cook for an additional 5 minutes. Season with salt to taste.
Garnish with fresh cilantro and serve hot over basmati rice.
