Cheesy Mushroom and Garlic Toasts

Ingredients:

4 slices of crusty bread like sourdough or baguette

2 cups cremini or button mushrooms, sliced

3 tbsp unsalted butter

2 garlic cloves, minced

1/4 cup heavy cream

1/2 tsp thyme fresh or dried

1 cup shredded mozzarella or gruyere cheese

Salt and black pepper to taste

Optional: chopped parsley for garnish


Directions:

Preheat your oven to 375F 190C and line a baking sheet with parchment paper.

In a skillet over medium heat, melt the butter. Add the mushrooms and sauté until golden brown and tender, about 6-8 minutes.

Stir in the garlic and cook for another minute until fragrant. Add the thyme, heavy cream, salt, and pepper, and simmer for 1-2 minutes until slightly thickened. Remove from heat.

Arrange the bread slices on the prepared baking sheet and lightly toast them in the oven for 5 minutes.

Spoon the creamy mushroom mixture over the toasted bread. Top each slice with shredded cheese.

Return the toasts to the oven and bake for 8-10 minutes, or until the cheese is melted and bubbly.

Garnish with parsley if desired and serve warm.
