Ingredients:

2 cans 15 oz each chickpeas garbanzo beans, drained and rinsed2 tbsp olive oil1 onion, chopped2 cloves garlic, minced1-inch piece of ginger, grated1 can 14.5 oz diced tomatoes1 tbsp ground cumin1 tbsp ground coriander1 tsp ground turmeric1 tsp garam masala1/2 tsp ground cinnamon1/4 tsp cayenne pepper optional1/2 cup water or vegetable brothSalt to tasteFresh cilantro for garnishLemon wedges for serving optional

Instructions:


Heat olive oil in a large pan over medium heat. Add onion and sauté for 5-7 minutes until soft and golden.Add garlic and ginger and cook for another 1-2 minutes until fragrant.Stir in the ground cumin, coriander, turmeric, garam masala, cinnamon, and cayenne if using, and cook for 1-2 minutes to toast the spices.Add the diced tomatoes and cook for 5-7 minutes, stirring occasionally until the tomatoes break down.Stir in the chickpeas, water or vegetable broth, and salt. Simmer for 10-15 minutes, allowing the flavors to meld.Garnish with fresh cilantro and serve with lemon wedges.
