Caramels
Ingredients:
1 cup unsalted butter1 cup heavy cream2 cups granulated sugar1/2 cup light corn syrup1/4 teaspoon salt1 teaspoon vanilla extract
Instructions:
Line an 8×8-inch baking dish with parchment paper and lightly grease it.In a large saucepan, melt butter over medium heat. Add heavy cream, sugar, corn syrup, and salt. Stir to combine.Bring the mixture to a boil, stirring constantly. Once it starts boiling, reduce the heat and let it simmer for about 15-20 minutes, stirring occasionally, until the caramel reaches 245F firm ball stage on a candy thermometer.Remove from heat and stir in vanilla extract.Pour the hot caramel into the prepared baking dish. Let it cool completely at room temperature.Once cooled, cut into squares and wrap each piece in wax paper for easy serving and storage.
