Breakfast Enchiladas: A Hearty and Flavorful Morning Feast!

Ingredients:

– 6 corn tortillas

– 4 large eggs

– 1/2 cup cooked chorizo or breakfast sausage optional

– 1/2 cup shredded cheese cheddar, Monterrey Jack, or a blend

– 1 cup green or red enchilada sauce

– 1/4 cup diced onions

– 1/4 cup chopped cilantro

– 1/4 cup sour cream optional

– 1/4 cup sliced avocado optional

– Salt and pepper to taste


– 1 tbsp olive oil

Instructions:

1 Preheat your oven to 375F 190C.

2 In a skillet, heat olive oil over medium heat. Scramble the eggs in the pan, adding salt and pepper to taste. If using, cook the chorizo or sausage alongside the eggs until browned and cooked through.

3 Warm the tortillas slightly in a dry pan or microwave so they dont crack.

4 Spread a small amount of enchilada sauce on the bottom of a baking dish.

5 Roll each tortilla with the scrambled eggs and chorizo, if using and place them seam-side down in the baking dish.

6 Pour the remaining enchilada sauce over the top of the rolled tortillas and sprinkle with shredded cheese.

7 Bake for 15-20 minutes, or until the cheese is melted and bubbly.

8 Garnish with chopped cilantro, sour cream, and sliced avocado if desired.

Serve hot for a filling and flavorful breakfast!
