Blueberry Cream Cheesecake Lasagna
This delicious no-bake dessert features layers of ladyfinger cookies, blueberry filling, creamy cheesecake mousse, and whipped cream, making it the perfect treat for summer gatherings!
Ingredients:
For the Bottom Layer:
Ladyfinger cookies, pound cake, or angel food cake slices for dipping
Graham crackers optional, for dipping ladyfingers
For the Cheesecake Filling:
12 oz cream cheese, softened 燎
cup powdered sugar
1 cup whipped topping fresh whipped cream can be used 籠
Optional: 2 tbsp lemon juice or 1 tsp lemon extract or vanilla extract
For the Blueberry Pie Filling:
1 cups fresh or frozen blueberries 𢡄
cup sugar
2 tbsp cornstarch
2 tbsp lemon juice or water
For the Whipped Cream Layer:
2 cups heavy whipping cream 林
cup powdered sugar for stabilization
Optional: Finely chopped white chocolate chips or curls
Instructions:
1 Prepare the Blueberry Filling if not using pre-made pie filling:
In a medium saucepan, combine 1 cups blueberries, cup sugar, 2 tbsp cornstarch, and 2 tbsp lemon juice or water.
Bring to a boil over medium-high heat, stirring occasionally.
Let simmer for 4-8 minutes until thickened, then remove from heat. Let cool and place in the fridge to chill.
2 Make the Cheesecake Filling:
Whip the softened cream cheese, powdered sugar, and your choice of extract lemon or vanilla until smooth and well-blended.
Add whipped topping and gently mix together, but dont overbeat.
Refrigerate until ready to assemble.
3 Layering the Cheesecake Lasagna:
Place a layer of ladyfinger cookies, pound cake, or angel food cake slices at the bottom of an 8×8 pan.
Add half of the blueberry filling over the base layer, spreading it out evenly.
Scoop the cheesecake filling on top of the blueberry layer and spread it evenly.
Add the remaining blueberry filling on top of the cheesecake layer and swirl or spread it out.
Top with whipped cream, spreading it evenly.
4 Chill and Serve:
Cover the pan and refrigerate for at least 6 hours or overnight to allow the layers to set.
Before serving, top with finely chopped white chocolate chips or curls for extra flavor and decoration optional.
Slice and serve chilled. Enjoy!
Note:
If using ladyfinger cookies, they will need to soak overnight in the dessert to soften. If youre in a hurry, dip them quickly in milk before layering in the pan, but dont soak them for too long to avoid them becoming mushy.
