Blue Christmas Truffles
Ingredients:
8 oz cream cheese, softened
3 cups powdered sugar
1 teaspoon vanilla extract
1 cup white chocolate, melted and slightly cooled
Blue food coloring
1/2 cup blue sprinkles or sanding sugar
1/2 cup white sprinkles or shredded coconut optional
Directions:
Make the Truffle Mixture:
In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Add the powdered sugar and vanilla extract, mixing until fully combined.
Add the Chocolate and Color:
Gradually mix in the melted white chocolate until smooth. Add a few drops of blue food coloring and mix until the desired shade of blue is achieved.
Chill the Mixture:
Cover the bowl and refrigerate for at least 1 hour, or until the mixture is firm enough to handle.
Shape the Truffles:
Use a spoon or small scoop to portion out the truffle mixture. Roll into 1-inch balls and place them on a parchment-lined baking sheet.
Decorate:
Roll the truffles in blue sprinkles, white sprinkles, or shredded coconut to coat evenly. For a festive mix, combine blue and white decorations.
Chill and Serve:
Return the decorated truffles to the refrigerator for at least 30 minutes to set. Serve cold and enjoy!
