Blackened Salmon Stuffed with Spinach & Parmesan

Ingredients:

For the Salmon:

2 large salmon fillets skinless

1 tbsp olive oil

1 tsp smoked paprika

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp cayenne pepper

1/2 tsp black pepper

1/2 tsp salt

1/2 tsp dried oregano

1/2 tsp dried thyme

For the Filling:

1 cup fresh spinach, chopped

1/2 cup cream cheese, softened

1/4 cup grated Parmesan cheese


1 garlic clove, minced

1 tbsp lemon juice

1/4 tsp salt

1/4 tsp black pepper

Directions:

In a small bowl, mix all the blackening seasoning ingredients: smoked paprika, garlic powder, onion powder, cayenne, black pepper, salt, oregano, and thyme.

In another bowl, combine the spinach, cream cheese, Parmesan, minced garlic, lemon juice, salt, and black pepper to form the filling.

Slice a pocket into the side of each salmon fillet, being careful not to cut all the way through.

Stuff each fillet generously with the spinach and Parmesan mixture.

Brush the salmon fillets with olive oil and coat evenly with the blackening seasoning.

Heat a large skillet over medium-high heat and add a bit of oil.

Sear the salmon for 3-4 minutes per side, until a blackened crust forms and the fish is cooked through.

Serve hot with a squeeze of lemon juice and enjoy!
