Blackberry Tiramisu with a Twist
Experience a delightful blend of creamy mascarpone and fresh blackberries in this unique tiramisu! Your taste buds will be dancing with every layer!
Ingredients:
– 1 cup heavy cream
– 1/4 cup fresh lemon juice
– 1 cup brewed coffee, cooled or espresso
– 1/4 cup chocolate liqueur optional
– 1 cup fresh blackberries or frozen, thawed
– 8 oz mascarpone cheese, softened
– 1/2 cup powdered sugar
– 1 teaspoon vanilla extract
– 24 ladyfinger cookies
– 1/4 cup granulated sugar
– Cocoa powder for dusting
– 1 teaspoon cornstarch optional, for thickening
– Additional blackberries for garnish
Instructions:
1. Make the Blackberry Sauce: In a small saucepan, combine the blackberries, granulated sugar, and lemon juice. Cook over medium heat, gently stirring until the blackberries begin to break down and the mixture thickens slightly, about 5-7 minutes. If a thicker sauce is desired, mix the cornstarch with a little water and add it to the sauce, cooking for an additional minute. Remove from heat and let it cool.
2. Prepare the Tiramisu Filling: In a large mixing bowl, whip the heavy cream with an electric mixer until stiff peaks form. In another bowl, combine the softened mascarpone cheese, powdered sugar, and vanilla extract. Carefully fold the whipped cream into the mascarpone mixture until smooth and creamy, ensuring not to deflate the whipped cream.
3. Combine Coffee and Liqueur: In a shallow dish, mix the cooled brewed coffee with the chocolate liqueur, if using.
4. Assemble the Tiramisu: Quickly dip each ladyfinger into the coffee mixture, making sure not to soak them, just a quick dip to absorb some liquid. Arrange a layer of dipped ladyfingers in the bottom of a 9×9-inch dish or a similar-sized serving dish. Spread half of the mascarpone mixture over the ladyfingers, then drizzle half of the blackberry sauce on top. Repeat with another layer of dipped ladyfingers, the remaining mascarpone mixture, and the remaining blackberry sauce.
5. Chill: Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight for the best results. This allows the flavors to meld beautifully.
6. Serve: Before serving, dust the top with cocoa powder and garnish with additional blackberries for a fresh touch.
