Blackberry Lavender White Chocolate Scones
Ingredients:
For the Scones:
2 cups all-purpose flour
1/4 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup cold unsalted butter, cubed
1/2 cup heavy cream plus extra for brushing
1 large egg
1 teaspoon vanilla extract
1 tablespoon dried culinary lavender
1 cup fresh blackberries
1/2 cup white chocolate chips

1/2 cup powdered sugar
1-2 tablespoons heavy cream
1/2 teaspoon vanilla extract
Instructions:
Prepare the Scone Dough:
Preheat the Oven: Preheat your oven to 400F 200C and line a baking sheet with parchment paper.
Mix the Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt.
Cut in the Butter: Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingers, work the butter into the flour mixture until it resembles coarse crumbs with pea-sized pieces.
Combine Wet Ingredients: In a separate bowl, whisk together the heavy cream, egg, and vanilla extract. Pour the wet mixture into the dry ingredients and gently stir until just combined. Avoid overmixing to keep the scones tender.
Fold in Additions: Carefully fold in the dried lavender, fresh blackberries, and white chocolate chips, being gentle to avoid breaking the berries too much.
Shape and Bake:
Shape the Dough: Turn the dough out onto a lightly floured surface. Pat it into a circle about 1 inch thick.
Cut into Wedges: Using a sharp knife or a bench scraper, cut the dough circle into 8 equal wedges. Place each wedge onto the prepared baking sheet, spacing them slightly apart.
