Biscoff Filled Chocolate Crinkle Cookies
A rich, chocolatey cookie filled with creamy Biscoff cookie butter and rolled in crushed Biscoff cookies for an extra crunch! Perfect for holidays, weekends, or anytime youre craving a decadent treat.
Ingredients:
cup salted butter 杻
cup brown sugar
cup white granulated sugar
2 large eggs 讀
1 tsp vanilla extract
tsp salt 蓼
cup semi-sweet chocolate chips, melted
cup cocoa powder, sifted
2 cups all-purpose flour, sifted
1 tsp baking soda
cup mini chocolate chips
Biscoff cookie butter for filling about cup
15 Biscoff cookies, crushed for rolling
Instructions:
1 Preheat the oven to 350F 175C and prepare your baking sheet by lining it with parchment paper or spraying it with cooking spray.
2 In a stand mixer with a paddle attachment, cream together the butter, brown sugar, and white granulated sugar on high speed until light and creamy about 3 minutes. Scrape the sides of the bowl as needed.
3 Add the eggs one at a time, mixing on high speed until light and fluffy. Then, add the vanilla and salt, mixing well.
4 Melt cup semi-sweet chocolate chips in the microwave in 30-second increments, stirring in between. Once melted, add it to the batter and mix until fully combined.
5 Sift in the cocoa powder and mix on low speed until well combined. Then, add the flour and baking soda, mixing on low speed until no flour pockets remain. Finally, fold in the mini chocolate chips.
6 The dough will be soft. Let it sit for 10 minutes to firm up slightly.
7 Crumble the Biscoff cookies into fine crumbs using a rolling pin or a blender. Set aside for rolling the cookies later.
8 Filling process:
Use a 1.5-inch scoop to scoop out a ball of dough.
Press a deep indent in the center of the dough with a 1 tsp measuring spoon while still inside the scoop.
Place 1 tsp of Biscoff cookie butter into the indent. Pinch the dough together to seal the edges and roll into a smooth ball.
Roll the dough ball in the Biscoff cookie crumbs to coat it evenly.
9 Place the dough balls on the prepared baking sheet, spacing them about 1 inch apart.
Bake at 350F for 10-12 minutes, until the edges and tops are cracked.
11 Let the cookies cool for at least 10 minutes before serving. These cookies are best served warm!
