Banana Split Fluff Salad
Ingredients:
2 ripe bananas, sliced
1 20 oz can of crushed pineapple, drained reserve juice if desired
1 8 oz package of cream cheese, softened
1 3.4 oz box instant vanilla pudding mix
1 cup milk optional, or use reserved pineapple juice for added flavor
1 12 oz container of whipped topping Cool Whip
1/2 cup mini marshmallows
1/4 cup chopped nuts optional; walnuts or pecans work well
1/4 cup chocolate chips or mini chocolate chunks
Maraschino cherries for garnish
1/4 cup chocolate syrup optional, for drizzling
Directions:
Prepare the Cream Cheese Mixture:
In a large mixing bowl, beat the softened cream cheese until smooth. Add the instant vanilla pudding mix and whisk in 1 cup of milk or reserved pineapple juice until the mixture is smooth and begins to thicken.
Add the Whipped Topping:
Gently fold the whipped topping Cool Whip into the pudding mixture until light and fluffy.
Combine the Fruit and Mix-ins:
Stir in the drained crushed pineapple, banana slices, mini marshmallows, and chopped nuts if using. Mix gently to ensure everything is evenly coated in the creamy mixture.
Chill:
Cover and refrigerate for at least 2 hours to allow the flavors to meld and the fluff to set. This can also be prepared a day in advance.
Serve:
Before serving, top the salad with chocolate chips or mini chocolate chunks, and garnish with maraschino cherries. For an extra indulgent touch, drizzle with chocolate syrup.
Tips:
Swap bananas for other fruits like strawberries, cherries, or additional pineapple for variety.
Substitute nuts with crushed graham crackers or granola for a nut-free crunch.
For a richer twist, add a few spoonfuls of hot fudge or caramel sauce to the fluff mixture.
