Almond Amaretti Cookies
Ingredients:
2 cups 224 g almond flour
1 cups 200 g powdered sugar
3 large egg whites
1 teaspoon orange zest
1 teaspoon lemon zest
10 maraschino cherries
teaspoon pure vanilla extract
Directions:
Prepare for Baking: Preheat your oven to 325F 165C and line a baking sheet with parchment paper.
Combine Dry Ingredients: In a medium bowl, mix together the almond flour and powdered sugar until well combined.
Whisk Egg Whites: In a separate bowl, whisk the egg whites until frothy, then gently fold them into the dry ingredients.
Add Flavorings: Add the orange zest, lemon zest, and vanilla extract to the dough, stirring until a soft and sticky dough forms.
Shape the Cookies: Scoop out tablespoon-sized portions of the dough and roll them into balls. Place each ball on the prepared baking sheet, leaving space between each cookie.
Add Cherries: Press a maraschino cherry gently into the center of each cookie for a classic touch.
Bake: Bake in the preheated oven for 20-25 minutes, or until the edges are golden and the cookies are set. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
