Instructions:
1. Prepare the Cheesecake Filling:
In a bowl, mix the cream cheese, powdered sugar, and vanilla extract until smooth.
Scoop small dollops onto a baking sheet lined with parchment paper and freeze for at least 30 minutes.
2. Make the Cookie Dough:
In a bowl, whisk together flour, baking soda, salt, and cinnamon.
In another bowl, beat the butter, granulated sugar, and brown sugar until fluffy. Add the egg and vanilla extract and mix well.
