Garlic Parmesan Pork Chops with Cheesy Scalloped Potatoes
Ingredients:
For the Pork Chops:
4 bone-in or boneless pork chops
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon Italian seasoning
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup grated Parmesan cheese
2 tablespoons butter, melted
1 tablespoon fresh parsley, chopped for garnish
For the Cheesy Scalloped Potatoes:
4 large russet potatoes, thinly sliced
2 tablespoons butter
2 cloves garlic, minced
2 tablespoons all-purpose flour
1 1/2 cups milk
1 cup heavy cream
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon onion powder
1 1/2 cups shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 tablespoon fresh thyme or parsley for garnish
Directions:
Preheat oven to 375F 190C. Grease a 9×13-inch baking dish.
Prepare the Scalloped Potatoes:
In a saucepan, melt butter over medium heat. Add garlic and cook for 1 minute until fragrant.
Stir in flour and cook for another minute. Gradually whisk in milk and heavy cream.
Season with salt, black pepper, and onion powder. Simmer for 2-3 minutes until thickened.
Remove from heat and stir in 1 cup cheddar cheese and mozzarella cheese until melted.
Assemble & Bake the Potatoes:
Arrange sliced potatoes in the prepared baking dish. Pour the cheese sauce evenly over the potatoes.
Sprinkle Parmesan cheese on top and cover with foil. Bake for 40 minutes. Remove foil and bake another 15 minutes until golden and bubbly.
Prepare the Pork Chops:
While the potatoes are baking, heat olive oil in a skillet over medium-high heat.
Season pork chops with garlic, Italian seasoning, paprika, salt, and black pepper.
Sear pork chops for 3-4 minutes per side until golden brown.
Transfer to a baking dish, brush with melted butter, and sprinkle Parmesan cheese over the top.
Finish Cooking the Pork Chops:
Place the pork chops in the oven during the last 15 minutes of the potato baking time.
Bake until the pork reaches an internal temperature of 145F 63C.
Serve: Let the pork chops rest for 5 minutes. Garnish both the potatoes and pork chops with fresh parsley or thyme and serve hot!
