Mozzarella-Stuffed Onion Rings with Garlic Butter
Ingredients:
For the Onion Rings:
2 large onions, cut into thick rings
8 oz mozzarella cheese, cut into strips
1 cup all-purpose flour
2 large eggs, beaten
1 cup panko breadcrumbs
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon paprika
Vegetable oil, for frying
For the Garlic Butter:
4 tablespoons unsalted butter, melted
2 cloves garlic, minced
1 teaspoon fresh parsley, chopped
1/4 teaspoon salt
Directions:
Prepare the Onion Rings:
Separate the onion slices into rings and pair up similar-sized ones.
Place a mozzarella strip between two onion rings, pressing them together firmly.
Coat the Onion Rings:
Place flour in one bowl, beaten eggs in another, and panko breadcrumbs mixed with salt, pepper, garlic powder, and paprika in a third.
Dip each stuffed onion ring in flour, then egg, and finally coat with the breadcrumb mixture. Press to ensure a firm coating.
Place coated rings on a tray and freeze for 20 minutes to help them hold together.
Fry the Onion Rings:
Heat vegetable oil in a deep fryer or skillet to 350F 175C.
Fry the rings in batches for 2-3 minutes per side or until golden brown and crispy.
Transfer to a paper towel-lined plate.
Prepare the Garlic Butter:
In a small bowl, mix melted butter, minced garlic, parsley, and salt.
Brush over the hot onion rings or serve as a dipping sauce.
