Do you like Ribeye Steak well done or medium rare ?

Ingredients:

2 ribeye steaks 1 to 1.5 inches thick

2 tablespoons olive oil

2 teaspoons salt

1 teaspoon black pepper

1 teaspoon smoked paprika optional

3 tablespoons unsalted butter

4 cloves garlic, smashed

2 sprigs fresh rosemary or thyme

Directions:

Prepare the Steaks:

Remove steaks from the refrigerator 30-40 minutes before cooking to allow them to reach room temperature.

Pat steaks dry with a paper towel to help create a better sear.

Rub both sides of the steak with olive oil, salt, black pepper, and smoked paprika if using.

Sear the Steaks:

Heat a cast iron skillet or heavy pan over high heat until very hot.

Place the steaks in the pan and sear for 3-4 minutes on one side without moving. Flip and sear for another 3-4 minutes on the other side.


Butter Basting:

Reduce heat to medium-low.

Add butter, smashed garlic, and fresh rosemary to the skillet.

Tilt the pan slightly and use a spoon to continuously baste the steak with the melted butter for 1-2 minutes.

Check Doneness:

Use a meat thermometer to check the internal temperature:

Rare: 120-125F 49-52C

Medium Rare: 130-135F 54-57C

Medium: 140-145F 60-63C

Medium Well: 150-155F 65-68C

Remove steaks from the skillet 5F before the desired temperature, as they will continue to cook while resting.

Rest & Serve:

Transfer the steaks to a plate and tent loosely with foil. Let them rest for 5-10 minutes to allow the juices to redistribute.

Slice and serve with extra garlic butter from the pan. Enjoy with mashed potatoes, roasted veggies, or a crisp salad!
