Ingredients for Apple Coffee Cake Muffins:

1 1/2 cups all-purpose flour

1/2 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1/4 cup brown sugar

1 large egg

1/2 cup sour cream

1 teaspoon vanilla extract

1 cup diced apples peeled

For the Streusel Topping:


1/4 cup brown sugar

1/4 cup all-purpose flour

1/2 teaspoon ground cinnamon

2 tablespoons cold unsalted butter

Directions:

Preheat oven to 350F 175C and line a muffin tin with paper liners.

In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.

In a separate large bowl, beat the butter and sugars together until light and fluffy. Add the egg, sour cream, and vanilla extract, mixing until well combined.

Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in the diced apples.

In a small bowl, mix the streusel topping ingredients with your fingers until crumbly.

Divide the batter evenly among the muffin cups, then sprinkle each with streusel topping.

Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.

Let cool before serving.
