Apple Cider Donuts
Warm Spiced Apple Cider Donuts
Ingredients:
1 cups apple cider
2 cups all-purpose flour
1 teaspoon baking powder
teaspoon baking soda
1 teaspoon cinnamon
teaspoon nutmeg
teaspoon cloves
teaspoon salt
1 large egg
cup granulated sugar
cup brown sugar
cup buttermilk
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
Cinnamon sugar for coating cup sugar 1 tablespoon cinnamon
Directions:
In a small saucepan, simmer the apple cider over medium heat until reduced to about cup, approximately 10-15 minutes. Let it cool completely.
Preheat your oven to 350F 175C and grease a donut pan.
In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
In another bowl, whisk the egg, granulated sugar, brown sugar, buttermilk, melted butter, vanilla extract, and the cooled apple cider reduction until smooth.
Gradually add the wet ingredients to the dry ingredients, stirring just until combined.
Spoon the batter into the prepared donut pan, filling each cavity about full.
Bake for 10-12 minutes, or until a toothpick inserted into a donut comes out clean.
While the donuts are still warm, toss them in the cinnamon sugar mixture. Let them cool slightly before serving.
