Caramel Apple Cheesecake Bars

Rich Caramel Apple Cheesecake Squares

Ingredients:

For the Crust:

2 cups graham cracker crumbs

cup unsalted butter, melted

For the Cheesecake Layer:

16 oz cream cheese, softened

cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

For the Apple Layer:

2 large apples, peeled and diced

2 tablespoons granulated sugar

teaspoon cinnamon

For the Streusel Topping:

cup all-purpose flour


cup old-fashioned oats

cup brown sugar, packed

cup unsalted butter, softened

For the Caramel Drizzle:

cup caramel sauce store-bought or homemade

Directions:

Preheat the oven to 350F 175C and line a 9×13-inch baking dish with parchment paper, leaving an overhang for easy removal.

In a medium bowl, mix the graham cracker crumbs and melted butter until well combined. Press the mixture firmly into the bottom of the prepared baking dish to form the crust.

In another bowl, beat the softened cream cheese and cup sugar together until smooth. Add the eggs and vanilla extract, mixing until fully incorporated. Pour the cheesecake mixture over the graham cracker crust and smooth it out.

In a small bowl, toss the diced apples with 2 tablespoons sugar and cinnamon. Evenly spread the apples over the cheesecake layer.

For the streusel topping, combine the flour, oats, brown sugar, and softened butter in a bowl. Use a fork or your fingers to mix until crumbly, then sprinkle over the apple layer.

Bake for 40-45 minutes, or until the cheesecake layer is set and the streusel topping is golden brown.

Remove from the oven and allow the bars to cool completely. Once cooled, drizzle with caramel sauce before cutting into squares and serving.
