These quick and easy berry no-bake cheesecakes are perfect for picnics or packed lunches! With layers of buttery biscuit crumbs, creamy cheesecake, and a refreshing berry topping, these cheesecakes are served in mason jars for a delightful, portable dessert.

Ingredients:

For the Biscuit Base:

210g 7.5 oz digestives or gluten-free graham crackers about 14 whole crackers

4 tbsp unsalted butter, melted

3 tbsp light brown sugar

Pinch of salt

For the Berry Layer:

175g 1 cup fresh blueberries

225g 1 cups fresh blackberries

Juice of half a lemon

2 tbsp cold water

100g 1/2 cup caster or fine granulated sugar

1 tbsp cornstarch mixed with 2 tbsp cold water

For the Cheesecake Layer:

180ml cup double heavy cream

2 x 225g 2 x 8 oz packs of Philadelphia cream cheese

1 tsp vanilla extract

85g cup confectioners sugar


Zest of one lemon

Instructions:

Step 1: Prepare the Biscuit Base

1 Crush the digestives or graham crackers into fine crumbs using a rolling pin or food processor.

2 In a bowl, combine the crumbs with the melted butter, light brown sugar, and a pinch of salt. Mix until the crumbs absorb the butter evenly.

Step 2: Make the Berry Layer

3 In a saucepan, add the blueberries, blackberries, lemon juice, water, and sugar. Heat gently for about 5 minutes, stirring occasionally, until the berries start to break down.

4 Stir in the cornstarch mixture and cook, stirring constantly, for another 30 seconds until the berry mixture thickens. Set aside to cool.

Step 3: Whisk the Cheesecake Layer

5 In a large bowl, whisk the heavy cream with an electric mixer until thick and forms stiff peaks.

6 Add the cream cheese, vanilla extract, and confectioners sugar. Continue whisking until the mixture is smooth and thick enough to hold its shape.

Step 4: Assemble the Cheesecakes

7 Divide the cookie crumbs between 6 mason jars approximately 200ml/7oz jars and press down with the back of a spoon to form a firm base.

8 Spoon or pipe the cheesecake mixture over the crumbs, filling each jar about 3/4 full.

9 Top with the cooled berry mixture, spreading it evenly over the cheesecake layer.

Step 5: Garnish and Serve

Sprinkle with the lemon zest for a burst of flavor. Serve immediately or cover with lids and refrigerate until ready to enjoy.
