Sticky Filipino Rice Cake: Biko
Ingredients:
2 cups glutinous rice
2 cups coconut milk
1 1/2 cups brown sugar
1/2 cup coconut cream
1/4 cup water
1/2 teaspoon salt
1 teaspoon vanilla extract
Grated coconut for topping optional
Directions:
Rinse the glutinous rice thoroughly, then place it in a large, heavy-bottomed pot.
Pour in the coconut milk and water, and stir well to combine.
Cook the rice over medium heat, stirring constantly, until it starts to thicken and become sticky.
Add the brown sugar, salt, and vanilla extract, continuing to stir until the mixture thickens and becomes even stickier. This should take about 10-15 minutes.
In a separate saucepan, heat the coconut cream until it slightly thickens.
Remove the rice from the heat and transfer it to a serving dish.
Pour the heated coconut cream over the top of the rice cake, spreading it evenly.
Allow the Biko to cool, then cut it into squares and serve. You can also top it with grated coconut for added texture and flavor.
