Scandinavian-Style Rice Porridge
Creamy Nordic Rice Pudding
Ingredients:
1 cup Arborio rice
4 cups whole milk
1/2 cup heavy cream
1/2 cup sugar
1 cinnamon stick
1 teaspoon vanilla extract
A pinch of salt
Cinnamon and sugar for garnish
Directions:
In a large saucepan, combine the Arborio rice, whole milk, and heavy cream.
Add the cinnamon stick, sugar, vanilla extract, and a pinch of salt.
Bring the mixture to a boil over medium-high heat.
Reduce the heat to low, cover, and simmer for about 45 minutes, stirring occasionally until the rice is soft and the mixture is creamy.
Remove the cinnamon stick and discard.
Serve the rice porridge hot in bowls, garnished with a sprinkle of cinnamon and sugar on top.
