Ingredients:

1 cup Arborio rice

4 cups whole milk

1 cup sugar

1 cinnamon stick

1 lemon peel strips

A pinch of salt

Ground cinnamon for garnish

Lemon zest for garnish optional

Directions:


In a saucepan, combine the Arborio rice and 3 cups of whole milk. Bring it to a gentle simmer over medium heat, stirring occasionally.

Add the cinnamon stick, lemon peel, and a pinch of salt to the rice mixture. Continue to simmer and stir occasionally until the rice is tender and the mixture thickens. This should take about 20-25 minutes.

In a separate saucepan, heat the remaining 1 cup of milk until its warm but not boiling.

Once the rice is tender and the mixture is thick, remove it from the heat.

Remove the cinnamon stick and lemon peel strips.

Stir in the sugar and the warmed milk, mixing until well combined.

Return the mixture to low heat and cook for an additional 5-7 minutes, or until it reaches your desired consistency.

Remove from heat and let it cool slightly.

Serve the Portuguese Sweet Rice in individual dishes, garnished with ground cinnamon and optional lemon zest.
