Stuffed Chicken Breast with Cranberry and Brie 燎
Ingredients:
4 boneless, skinless chicken breasts
Salt and pepper to taste 蓼
1/2 cup dried cranberries
4 oz Brie cheese, sliced 燎
1/4 cup fresh spinach, chopped
2 tbsp olive oil
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
1 tbsp honey optional
Directions:
1 Preheat Oven: Preheat the oven to 375F 190C.
2 Prepare Chicken: Using a sharp knife, carefully slice each chicken breast horizontally to create a pocket, being cautious not to cut all the way through. Season both the inside and outside of the chicken with salt and pepper.
3 Stuff Chicken: Fill each chicken breast with slices of Brie cheese, a tablespoon of dried cranberries, and a bit of chopped spinach. Gently press the filling to secure it inside.
4 Sear the Chicken: Heat olive oil in an oven-safe skillet over medium heat. Add the stuffed chicken breasts and sear on both sides until golden brown, about 2-3 minutes per side.
5 Season and Bake: Sprinkle the chicken with chopped rosemary and thyme. Drizzle with honey if desired for a touch of sweetness. Transfer the skillet to the oven and bake for 15-20 minutes, or until the chicken is fully cooked and the cheese is melted and bubbly.
6 Rest and Serve: Let the chicken rest for a few minutes before serving to lock in the juices.
