Would You Eat Chocolate Covered Strawberry Cheesecake?
Ingredients:
– 1 cup fresh strawberries, chopped
– 3 large eggs
– 1/4 cup granulated sugar
– 1 cup fresh strawberries, halved
– 1 cup semi-sweet chocolate chips

– 2 cups crushed chocolate wafer cookies

– 1/4 cup melted semi-sweet chocolate for drizzling
– 1 cup granulated sugar
Instructions:
1. Preheat your oven to 325F 165C and grease a 9-inch springform pan.
2. In a medium bowl, blend together the crushed chocolate wafer cookies, granulated sugar, and melted butter until well combined. Press this mixture into the bottom of your prepared springform pan, creating a firm crust.
3. In a large bowl, beat the softened cream cheese together with granulated sugar until smooth. Slowly add the sour cream, followed by the eggs, one at a time, mixing well after each addition. Mix in the vanilla extract and the chopped strawberries until everything is incorporated.
4. Pour the cheesecake filling over the crust, ensuring its spread evenly.
5. Bake in the preheated oven for 50-60 minutes, until the center appears set. Once done, turn off the oven, crack the door open slightly, and let the cheesecake rest inside for 1 hour.
6. After the hour, take the cheesecake out and allow it to cool completely at room temperature. Then, refrigerate it for at least 4 hours or overnight to chill.
7. For the chocolate ganache, heat the heavy cream in a small saucepan over medium heat until it begins to simmer. Remove from heat and pour over the semi-sweet chocolate chips, stirring until smooth and glossy.
8. Once the cheesecake is fully chilled, pour the ganache over the top, spreading it evenly with a spatula. Return to the refrigerator for another hour to set.
9. Right before serving, arrange the halved strawberries on top and drizzle with the melted chocolate for an added touch.
