Ingredients:
– 1/2 cup white chocolate chips
– 1 1/2 cups all-purpose flour
– 1 large egg for cheesecake filling
– 1/4 cup sugar for cheesecake filling
– 1 tbsp lemon juice for blueberry sauce
– 1/2 cup buttermilk
– 1/4 tsp salt
– 3/4 cup granulated sugar
– 1 cup fresh blueberries for the cupcakes
– 8 oz cream cheese, softened
– 1 tbsp lemon juice for blueberry sauce
– 2 large eggs
– 1 tsp baking powder
– 1/2 unsalted butter, room temperature
– 1 tsp vanilla extract for cheesecake filling
– 1 tsp vanilla extract for frosting
– 1/2 cup unsalted butter, room temperature for frosting
– 3 cups powdered sugar
– 1 cup fresh blueberries for blueberry sauce
– 1 large egg for cupcakes
– Fresh blueberries and mint leaves for garnish
– 1/2 tsp baking soda
Instructions:
1. Preheat your oven to 350F 175C and line a muffin tin with cupcake liners.
2. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
3. In a large bowl, beat the butter and sugar until its light and fluffy. Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
4. Gradually add the flour mixture alternately with the buttermilk to the butter mixture, starting and ending with the flour. Gently fold in the fresh blueberries and white chocolate chips.
5. In a separate medium bowl, beat the cream cheese, granulated sugar, egg, and vanilla extract until smooth for the cheesecake filling.
6. Fill each cupcake liner with about a tablespoon of cupcake batter, followed by a tablespoon of cheesecake filling, and top with more cupcake batter until its about 3/4 full.
7. Bake the cupcakes for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow cooling completely.
8. For the blueberry sauce, combine the blueberries, sugar, and lemon juice in a small saucepan over medium heat. Cook until the berries burst and the sauce thickens, about 5-7 minutes. Let it cool.
9. For the frosting, beat the room temperature butter and cream cheese until creamy. Gradually add the powdered sugar and vanilla extract, mixing until smooth.
10. Once the cupcakes are cool, frost them generously with the cream cheese frosting, drizzle with blueberry sauce, and garnish with fresh blueberries and mint leaves.
