Would You Eat … Luscious Lemon-Lime Cherry Pistachio Cheesecake Recipe 樂

Ingredients:

– 1/2 cup unsalted butter, melted

– 1/4 cup sugar

– 1 1/2 cups graham cracker crumbs

– 2 cups cream cheese, softened

– 1 cup powdered sugar

– 1/4 cup sour cream

– 1/4 cup lemon juice

– 1/4 cup lime juice

– 1 teaspoon vanilla extract

– 1 cup cherries, pitted and halved

– 1/2 cup pistachios, chopped

Instructions:


1. Preheat your oven to 325F 160C. Prepare a 9-inch springform pan by greasing it lightly.

2. To make the crust, combine graham cracker crumbs, melted butter, and sugar in a bowl. Mix until the crumbs are well-coated.

3. Press the crumb mixture firmly into the bottom of the prepared pan to form an even layer. Bake for 10 minutes, then remove from the oven and let it cool.

4. In a large mixing bowl, beat the softened cream cheese using an electric mixer until smooth and creamy. Gradually add powdered sugar, mixing well until incorporated.

5. Add sour cream, lemon juice, lime juice, and vanilla extract to the cream cheese mixture. Beat until smooth and well combined.

6. Fold in the halved cherries and chopped pistachios gently so theyre evenly distributed in the mixture.

7. Pour the cheesecake filling over the baked crust, smoothing the top with a spatula.

8. Bake in the preheated oven for approximately 50 minutes, or until the edges are set but the center is still slightly jiggly.

9. Turn off the oven and leave the cheesecake inside with the door slightly ajar for about an hour. This helps prevent cracking.

10. Once cooled, transfer the cheesecake to the refrigerator and chill for at least 4 hours or overnight before serving.
