1/4 cup unsalted butter, melted

For the cheesecake filling:

24 oz 3 packages cream cheese, softened

1 cup granulated sugar

1/4 cup sour cream

3 large eggs

1 teaspoon vanilla extract

For the glaze:

1 cup powdered sugar


2-3 tablespoons milk or cream

1/2 teaspoon vanilla extract

Directions:

Preheat and prepare the pan: Preheat your oven to 325F 165C. Grease a 9-inch springform pan and line the bottom with parchment paper for easy removal.

Make the crust: Combine the graham cracker crumbs, sugar, and melted butter in a bowl until it resembles wet sand. Press the mixture firmly into the bottom of the springform pan to form an even crust. Bake for 10 minutes, then set aside to cool.

Prepare the cinnamon swirl: In a small bowl, mix the brown sugar, cinnamon, and melted butter until smooth. Set aside.

Make the cheesecake filling: In a large bowl, beat the cream cheese and sugar together until creamy and smooth. Add the sour cream, eggs one at a time, and vanilla extract, mixing well after each addition.

Layer the cheesecake: Pour half of the cheesecake batter over the crust. Drizzle half of the cinnamon swirl mixture over the batter and swirl gently with a knife or skewer. Pour the remaining cheesecake batter on top and drizzle the rest of the cinnamon swirl mixture, swirling again for a marbled effect.

Bake the cheesecake: Place the springform pan in a larger baking pan and add about 1 inch of hot water to the outer pan to create a water bath. Bake for 60-70 minutes, or until the center is slightly jiggly but set.

Cool and chill: Remove the cheesecake from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours or overnight for the best texture.

Prepare the glaze: Whisk together the powdered sugar, milk, and vanilla extract until smooth. Drizzle the glaze over the chilled cheesecake before serving.
