Thai Ginger Chicken Gai Pad King

Ingredients:

4 boneless, skinless chicken breasts, thinly sliced2 tablespoons vegetable oil1 tablespoon fresh ginger, minced3 cloves garlic, minced1/2 onion, thinly sliced1/2 red bell pepper, sliced1/2 cup chicken broth2 tablespoons soy sauce1 tablespoon fish sauce optional1 tablespoon brown sugar1 tablespoon rice vinegar1/4 teaspoon crushed red pepper flakes optionalFresh cilantro for garnishCooked rice for serving

Instructions:


Heat vegetable oil in a large pan over medium heat. Add ginger and garlic, sauté for 1-2 minutes until fragrant.Add sliced chicken and cook until browned and cooked through.Stir in onion and bell pepper and cook for another 3-4 minutes.In a small bowl, whisk together chicken broth, soy sauce, fish sauce if using, brown sugar, rice vinegar, and red pepper flakes.Pour the sauce over the chicken and vegetables, and simmer for 3-4 minutes until the sauce thickens slightly.Serve the ginger chicken over cooked rice and garnish with fresh cilantro.
