Sweet Bell Pepper Rice
Ingredients:
1 cup long-grain rice2 cups vegetable broth or water1 tbsp olive oil1 red bell pepper, chopped1 yellow bell pepper, chopped1/2 onion, finely chopped2 cloves garlic, minced1 tsp dried oreganoSalt and pepper to taste
Instructions:
In a medium saucepan, bring vegetable broth or water to a boil.Add rice, reduce heat to low, cover, and cook for 15-20 minutes, or until rice is tender and liquid is absorbed.In a large skillet, heat olive oil over medium heat. Add onion, garlic, and bell peppers. Sauté until softened, about 5 minutes.Stir in oregano, salt, and pepper, and cook for another minute.Fluff the cooked rice with a fork and combine with the sautéed peppers and onions.Serve warm as a flavorful side dish!
