Lemon-Roasted Chicken

Ingredients:

4 bone-in, skin-on chicken thighs2 lemons, thinly sliced3 cloves garlic, minced2 tbsp olive oil1 tsp dried oregano1/2 tsp paprikaSalt and pepper to tasteFresh parsley for garnish


Instructions:

Preheat oven to 375F 190C and grease a baking dish.Arrange chicken thighs in the dish and season with salt, pepper, oregano, and paprika.Place lemon slices on and around the chicken, and sprinkle minced garlic over the top.Drizzle olive oil evenly over the chicken and lemons.Roast for 35-40 minutes or until the chicken is cooked through and the skin is crispy.Garnish with fresh parsley and serve hot with your favorite side dishes!
