Easy Vegan Sheet Pan Roasted Cauliflower, Tomatoes, and Garbanzo Beans 復

Ingredients:

1 medium head cauliflower, cut into florets1 can 15 oz garbanzo beans, drained and rinsed1 cup cherry tomatoes, halved3 tbsp olive oil1 tsp smoked paprika1 tsp ground cumin1/2 tsp turmericSalt and pepper to tasteFresh parsley or cilantro for garnish


Instructions:

Preheat oven to 400F 200C and line a sheet pan with parchment paper.In a large bowl, combine cauliflower, garbanzo beans, and cherry tomatoes.Drizzle with olive oil and sprinkle with smoked paprika, cumin, turmeric, salt, and pepper. Toss to coat evenly.Spread the mixture onto the prepared sheet pan in an even layer.Roast for 25-30 minutes, stirring halfway, until the cauliflower is tender and golden.Garnish with fresh parsley or cilantro and serve hot!
