Mediterranean Chicken Sheet Pan Dinner
Ingredients:
4 boneless, skinless chicken breasts1 cup cherry tomatoes, halved1 cup zucchini, sliced1/2 cup kalamata olives1/4 cup red onion, thinly sliced2 tbsp olive oil1 tbsp lemon juice1 tsp dried oregano1/2 tsp garlic powderSalt and pepper to tasteCrumbled feta cheese for garnish optional
Instructions:
Preheat oven to 400F 200C and line a sheet pan with parchment paper.Place chicken breasts, cherry tomatoes, zucchini, olives, and red onion on the sheet pan.Drizzle with olive oil and lemon juice, then sprinkle with oregano, garlic powder, salt, and pepper. Toss the vegetables to coat evenly.Roast for 25-30 minutes, flipping the chicken halfway, until the chicken is fully cooked and the vegetables are tender.Garnish with crumbled feta cheese, if desired, and serve hot!
