Chocolate Cherry Biscotti

Ingredients:

2 cups all-purpose flour1/3 cup unsweetened cocoa powder1 tsp baking powder1/4 tsp salt3/4 cup granulated sugar2 large eggs1 tsp vanilla extract1/2 cup dried cherries1/2 cup mini chocolate chips

Instructions:


Preheat oven to 350F 175C. Line a baking sheet with parchment paper.In a bowl, whisk together flour, cocoa powder, baking powder, and salt.In another bowl, beat sugar and eggs until light and fluffy. Mix in vanilla extract.Gradually add dry ingredients to the wet mixture. Fold in dried cherries and chocolate chips.Shape the dough into a log on the prepared baking sheet and flatten slightly.Bake for 25-30 minutes, then cool for 5-10 minutes. Slice the log diagonally into biscotti pieces.Arrange slices on the baking sheet and bake for another 10-12 minutes until crispy.
