Ricotta Cookies

Ingredients:

1 cup unsalted butter, softened

2 cups granulated sugar

1 container 15 oz ricotta cheese

3 large eggs

2 tsp vanilla extract

4 cups all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

For the Glaze:

1 1/2 cups powdered sugar

3 tbsp milk

1/2 tsp vanilla extract


Sprinkles for decoration optional

Instructions:

Preheat oven to 350F 175C. Line baking sheets with parchment paper.

In a large bowl, cream together butter and sugar until light and fluffy.

Mix in ricotta cheese, eggs, and vanilla until smooth.

In a separate bowl, whisk together flour, baking powder, baking soda, and salt.

Gradually add dry ingredients to the wet mixture and stir until combined.

Drop spoonfuls of dough onto prepared baking sheets.

Bake for 10-12 minutes or until cookies are set but not browned. Allow to cool.

For the Glaze:

Mix powdered sugar, milk, and vanilla until smooth.

Drizzle over cooled cookies and top with sprinkles if desired.
