Lemon Butter Cookies with Creamy Lemon Filling
A zesty lemon filling encased in a buttery cookieperfect for enjoying with a cup of tea!
Ingredients:
1 cup unsalted butter, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1/4 cup cornstarch
A pinch of salt
1/2 cup lemon curd for filling
Powdered sugar for dusting
Instructions:
Prepare the Dough:
In a large bowl, cream together the softened butter and powdered sugar until light and fluffy. Mix in the vanilla extract.
Combine Dry Ingredients:
In a separate bowl, whisk together the flour, cornstarch, and a pinch of salt. Gradually add this dry mixture to the butter mixture, mixing until a soft dough forms.
Shape the Cookies:
Roll small balls of dough and gently flatten them into discs. Create a small indent in the center of each cookie using your thumb.
Bake:
Preheat your oven to 350F 175C. Arrange the cookies on a baking sheet lined with parchment paper and bake for 12-15 minutes, or until the edges are slightly golden.
Fill and Serve:
Once the cookies have cooled, fill the indents with lemon curd. Dust with powdered sugar just before serving.
