Holiday Sweet Potato & Goat Cheese Delight
Ingredients:
4 medium sweet potatoes, peeled and sliced into 1/4-inch rounds
200g goat cheese, softened
1/2 cup pecans, roughly chopped
1/4 cup pure maple syrup
2 tablespoons olive oil
1 tablespoon fresh thyme leaves, plus extra for garnish
Salt and pepper to taste
Directions:
Roast the Sweet Potatoes:
Preheat your oven to 400F 200C. Place the sweet potato slices on a baking sheet, drizzle with olive oil, and season with salt and pepper.
Roast for 20-25 minutes, flipping halfway through, until the slices are tender and slightly caramelized.
Prepare the Maple-Pecan Drizzle:
In a small saucepan, heat the maple syrup over medium heat.
Stir in the chopped pecans and cook for 2-3 minutes, allowing the pecans to absorb the maple flavor. Remove from heat and set aside to cool slightly.
Layer the Sweet Potatoes and Goat Cheese:
Arrange the roasted sweet potatoes on a serving platter.
Start with one sweet potato slice, spread a thin layer of goat cheese on top, and add another sweet potato slice. Repeat until you have 3 layers per stack, finishing with a layer of goat cheese on top.
Drizzle and Garnish:
Drizzle the warm maple-pecan mixture over each stack, allowing the glaze to seep through the layers.
Garnish with fresh thyme leaves for a pop of herbal freshness.
Serve Warm:
Serve immediately as a cozy, festive side dish or appetizer that will bring elegance and comfort to your holiday table.
