Georgia OKeeffes Pecan Butterballs
Ingredients:
2 cups all-purpose flour
1/2 teaspoon salt
1 cup butter, softened
1/4 cup honey
3 teaspoons vanilla extract
2 cups finely chopped pecans
1 cup powdered sugar for coating
Instructions:
Preheat the Oven: Set your oven to 300F 150C. Prepare a baking sheet by greasing it or lining it with parchment paper.
Mix the Dry Ingredients: In a medium bowl, sift together the flour and salt.
Prepare the Wet Mixture: In a separate large bowl, combine the softened butter, honey, and vanilla. Mix until smooth and creamy.
Combine and Add Pecans: Gradually add the dry ingredients to the wet mixture, stirring until well blended. Fold in the finely chopped pecans.
Shape the Cookies: Roll the dough into 1-inch balls and place them on the prepared baking sheet, leaving about 2 inches of space between each ball.
Bake: Bake for 40-45 minutes, until the cookies are set and lightly golden.
Coat with Sugar: Let the cookies cool for about 5 minutes. Then, roll each cookie in powdered sugar to give them a sweet, snowy coating.
