Ingredients:
1 1/2 cups crushed pineapple, well-drained
2 cups finely crushed graham cracker crumbs
1 cup sweetened shredded coconut plus extra for rolling
1/2 cup powdered sugar
1/2 teaspoon almond extract optional, for extra flavor
Directions:
Prepare the Mixture: In a large mixing bowl, combine the crushed pineapple, graham cracker crumbs, shredded coconut, powdered sugar, and almond extract if using. Stir well until the mixture is fully combined and forms a sticky dough.
Shape into Balls: Scoop out tablespoon-sized portions of the mixture and roll them into small balls with your hands.
Coat with Coconut: Roll each ball in additional shredded coconut until fully coated.
Chill: Place the balls on a baking sheet lined with parchment paper and refrigerate for at least 1 hour to firm up.
