Chicken Marbella
Ingredients:
4 bone-in, skinless chicken thighs
1/2 cup pitted green olives, chopped
1/4 cup capers
1/2 cup prunes, chopped
1/4 cup red wine vinegar
1/4 cup olive oil
1/4 cup brown sugar
1/2 tsp garlic powder
1 tsp dried oregano
Salt and pepper to taste
Fresh parsley for garnish
Instructions:
Preheat oven to 375F 190C.
In a bowl, combine olives, capers, prunes, vinegar, olive oil, brown sugar, garlic powder, oregano, salt, and pepper.
Place the chicken thighs in a baking dish and pour the marinade over the chicken.
Bake for 35-40 minutes, or until chicken is fully cooked and tender, occasionally basting with the sauce.
Garnish with fresh parsley before serving.
