Easy Oreo Truffles
Ingredients:
1 package 16 oz Oreo cookies
8 oz cream cheese, softened
2 cups semisweet chocolate chips for coating
1 tbsp vegetable oil optional, for a smoother coating
Instructions:
In a food processor, crush the Oreo cookies until finely ground you should have about 3 cups of crumbs.
In a large bowl, mix the crushed Oreos with softened cream cheese until well combined and smooth.
Roll the mixture into small balls, about 1 inch in diameter, and place them on a parchment-lined baking sheet.
Chill the Oreo truffles in the refrigerator for at least 30 minutes to firm up.
In a microwave-safe bowl, melt the chocolate chips with vegetable oil if using in 30-second intervals, stirring until smooth.
Dip each chilled truffle into the melted chocolate, coating them completely. Use a fork to lift the truffles and allow any excess chocolate to drip off.
Place the dipped truffles back on the parchment-lined baking sheet and let them set at room temperature or in the refrigerator until the chocolate hardens.
If desired, drizzle with extra chocolate or sprinkle with crushed Oreos for decoration.
