Fresh Strawberry Upside Down Cake
Ingredients:
1 lb fresh strawberries, sliced
1 box 3 oz strawberry gelatin mix
1 box white or vanilla cake mix
1 cup water
1/3 cup vegetable oil
3 large eggs
2 cups mini marshmallows
Whipped cream for serving
Instructions:
Preheat oven to 350F 175C and grease a 9×13-inch baking dish.
Spread the sliced strawberries evenly across the bottom of the dish. Sprinkle the strawberry gelatin mix on top of the strawberries.
Scatter mini marshmallows over the gelatin layer.
In a mixing bowl, prepare the cake batter according to the package instructions using water, oil, and eggs.
Pour the cake batter over the marshmallow and strawberry layers.
Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
Let the cake cool for 10-15 minutes, then carefully invert onto a serving platter.
Serve this vibrant and fruity cake with a dollop of whipped cream for an extra treat!
