Fish Tacos Ultimo
Ingredients:
1 lb firm white fish fillets like cod or halibut
1 tbsp olive oil
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp cumin
1/4 tsp cayenne pepper
Salt and pepper to taste
8 small tortillas
1/2 cup shredded cabbage
1/4 cup diced red onion
1/2 cup diced tomatoes
1/4 cup chopped cilantro
1 ripe avocado, sliced
1 lime, cut into wedges
For the Ultimate Sauce:
1/2 cup sour cream
2 tbsp mayonnaise
1 tbsp lime juice
1 tbsp chopped cilantro
1 tsp hot sauce optional
Salt to taste
Instructions:
Preheat a skillet over medium heat. Drizzle the fish with olive oil, then sprinkle with paprika, garlic powder, cumin, cayenne, salt, and pepper.
Cook the fish for 3-4 minutes per side until fully cooked and flaky.
In a small bowl, mix together all the ingredients for the Ultimate Sauce: sour cream, mayonnaise, lime juice, cilantro, hot sauce optional, and salt.
Warm the tortillas in a separate pan.
Assemble tacos by adding the cooked fish, shredded cabbage, diced red onion, tomatoes, cilantro, and sliced avocado.
Drizzle with the Ultimate Sauce and serve with lime wedges on the side.
