Chicken Francese
Ingredients:
4 boneless, skinless chicken breasts
1/2 cup all-purpose flour
2 large eggs
1/4 cup grated Parmesan cheese
1/4 cup olive oil
1/4 cup unsalted butter
1 cup chicken broth
1/2 cup fresh lemon juice
2 tbsp parsley, chopped
Salt and pepper to taste
Instructions:
Pound chicken breasts to an even thickness and season with salt and pepper.
Dredge each piece in flour, then dip in a mixture of beaten eggs and Parmesan cheese.
Heat olive oil in a large skillet over medium heat. Cook chicken until golden on both sides, about 4 minutes per side. Remove and set aside.
In the same skillet, melt butter and add chicken broth and lemon juice. Simmer for 3-5 minutes until slightly thickened.
Return chicken to the skillet and spoon sauce over it. Cook for 2-3 minutes to coat the chicken in the sauce.
Garnish with chopped parsley and serve immediately.
